Ingredients

For the Chai Tea Cookies

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cardamom
  • ½ teaspoon ground cloves
  • ½ teaspoon ground nutmeg
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 tablespoons strongly brewed chai tea or chai concentrate

For the Vanilla Glaze

  • cups powdered sugar
  • 2 to 3 tablespoons of milk or cream
  • ½ teaspoon vanilla extract
  • You can also add a small pinch of cinnamon to the glaze if you want an extra touch of spice.
  • A Closer Look at the Ingredients
  • Before we start baking let me quickly talk about why these ingredients matter. Understanding a recipe always makes me feel more confident in the kitchen.

Butter

  • Use softened butter not melted butter. Softened butter creams beautifully with sugar and helps create a lighter, softer cookie.
  • If your butter is too cold it will be difficult to mix properly. If it is melted, the cookies may spread too much.

Sugar

  • Granulated sugar gives the cookies sweetness while helping create those slightly crisp edges that contrast beautifully with the soft center.

Chai Spices

  • This is where the magic happens.
  • Cinnamon provides sweetness and warmth. Ginger adds a little brightness and gentle heat. Cardamom gives the cookies a fragrant almost floral note. Cloves are bold and warm, while nutmeg adds a deep, cozy finish.
  • Together they create that unmistakable chai flavor.

Chai Tea

  • Using brewed chai tea adds another layer of flavor. Make the tea strong so the flavor does not disappear into the cookie dough.
  • You can use chai tea bags or a chai concentrate. Just remember that some concentrates are sweeter than others so taste and adjust if needed.

Flour

  • All-purpose flour creates a sturdy but tender cookie. I recommend measuring it carefully. Too much flour can make cookies dry and dense.
  • For the best accuracy spoon the flour into your measuring cup and level it off instead of packing the cup directly into the flour container.

Vanilla

  • Vanilla softens the stronger spice flavors and makes the whole recipe taste warmer and more rounded.

Instructions

Step 1: Prepare Your Baking Sheets

  • Preheat your oven to 350°F (175°C).
  • Line your baking sheets with parchment paper or silicone baking mats. This helps prevent sticking and makes cleanup much easier.

Step 2: Cream the Butter and Sugar

  • Place the softened butter and granulated sugar in a large mixing bowl.
  • Beat them together for about 2 to 3 minutes until the mixture looks lighter and fluffier.
  • Do not rush this step. Properly creamed butter and sugar help create a softer texture.

Step 3: Add the Egg and Vanilla

  • Add the egg and vanilla extract.
  • Mix until everything is smooth and fully combined. Scrape down the sides of the bowl with a rubber spatula so no ingredients are hiding around the edges.

Step 4: Add the Chai Tea

  • Pour in the strongly brewed chai tea or chai concentrate.
  • Mix gently until incorporated.
  • At this point, the dough should already smell absolutely wonderful.

Step 5: Combine the Dry Ingredients

  • In a separate bowl, whisk together:
  • Flour
  • Cinnamon
  • Ginger
  • Cardamom
  • Cloves
  • Nutmeg
  • Baking soda
  • Baking powder
  • Salt
  • Whisking the dry ingredients first helps distribute the spices and leavening agents evenly throughout the dough.

Step 6: Mix the Dough

  • Gradually add the dry ingredients to the butter mixture.
  • Mix on low speed until just combined.
  • This is important: do not overmix the dough. Once the flour disappears, stop mixing. Overmixing can make cookies tougher than they need to be.

Step 7: Chill the Dough

  • Cover the bowl and chill the dough for about 30 minutes.
  • This step helps the flavors develop and prevents the cookies from spreading too much in the oven.
  • If your kitchen is warm, chilling the dough becomes even more important.

Step 8: Scoop the Cookies

  • Use a cookie scoop or tablespoon to portion the dough.
  • Place the dough balls on the prepared baking sheets, leaving enough space between them for spreading.
  • I usually give each cookie around 2 inches of space.

Step 9: Bake

  • Bake for approximately 10 to 12 minutes.
  • The edges should look set, while the centers may still appear slightly soft. That is exactly what you want.
  • The cookies will continue to set as they cool.

Step 10: Cool Completely

  • Allow the cookies to rest on the baking sheet for about 5 minutes.
  • Then carefully transfer them to a wire rack to cool completely.
  • Do not glaze warm cookies unless you want the glaze to melt and run everywhere. I have learned that lesson the messy way.
