Ingredients
  

For the Dough

  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • ½ cup cold unsalted butter cubed
  • 5 –6 tablespoons cold water

For the Filling

  • 2 medium apples peeled and diced
  • 3 tablespoons brown sugar
  • 1 tablespoon white sugar
  • 1 tablespoon butter
  • ½ teaspoon cinnamon
  • Pinch of nutmeg
  • 1 teaspoon lemon juice
  • 1 teaspoon cornstarch mixed with 1 tablespoon water

For Cooking

  • Oil for frying if frying
  • Or 1 egg beaten with 1 tablespoon milk for baking glaze

Instructions
 

Step 1 — Prepare the Filling

  • Start by melting butter in a pan over medium heat. Add the diced apples and stir gently. As they cook, you’ll smell that fresh apple aroma filling your kitchen — one of my favorite moments.
  • Sprinkle in the sugars, cinnamon, and nutmeg. Stir until the apples soften and release juices. Add lemon juice for brightness, then mix in the cornstarch slurry. Cook until the mixture thickens slightly. Remove from heat and let it cool.

Step 2 — Make the Dough

  • In a bowl, combine flour, sugar, and salt. Add cold butter cubes and rub them into the flour using your fingertips. I love this step — it’s messy but satisfying.
  • Gradually add cold water and mix until a soft dough forms. Wrap it and chill for 20 minutes. This resting time helps create flakiness later.

Step 3 — Roll and Fill

  • Roll the dough on a lightly floured surface until thin. Cut into rectangles or circles. Spoon apple filling onto one side, leaving space around the edges. Fold over and seal with a fork.

Step 4 — Cook the Pies

  • Frying option:
  • Heat oil in a pot. Fry pies until golden brown and crisp. Drain on paper towels.

Baking option:

  • Place pies on parchment-lined tray, brush with egg wash, and bake at 190°C (375°F) for about 20 minutes or until golden.

Step 5 — Cool and Serve

  • Let them cool slightly before eating. The filling will be hot, and patience here saves burnt tongues — speaking from experience!
