Ingredients
  

6 tablespoons unsalted butter

  • Butter gives the treats a rich flavor and helps create that soft smooth marshmallow coating.

10 ounces mini marshmallows

  • Mini marshmallows melt quickly and evenly. You can use regular-sized marshmallows if needed but mini marshmallows are easier to work with.

6 cups Lucky Charms cereal

  • This is the star of the recipe. The cereal provides the crunchy base and those colorful marshmallow pieces.

2 cups mini marshmallows, divided

  • Adding some extra mini marshmallows at the end creates little gooey pockets inside the finished treats.

1 teaspoon vanilla extract

  • Vanilla adds a warm bakery-style flavor that makes the treats taste even better.

Pinch of salt

  • This is optional but highly recommended. A small amount of salt balances the sweetness and makes the buttery flavor stand out.

Ingredient Notes and Simple Substitutions

  • Although this is a very straightforward recipe a few small ingredient choices can affect the final result.

Salted or Unsalted Butter

  • I usually prefer unsalted butter because it gives me more control over the flavor. However salted butter works perfectly well. If you use salted butter, simply skip or reduce the additional pinch of salt.

Can I Use Marshmallow Fluff?

  • Marshmallow fluff can work but it creates a slightly different texture. Traditional marshmallows usually give cereal treats a firmer structure.
  • For the best classic chewy texture I recommend regular mini marshmallows.

Can I Add Other Cereals?

  • Absolutely. You can replace part of the Lucky Charms with crispy rice cereal if you want a slightly less sweet treat.
  • A combination of Lucky Charms and Rice Krispies works particularly well and creates a lighter texture.

Instructions
 

Step 1: Prepare Your Baking Pan

  • Grease a 9 x 13-inch baking dish with butter or cooking spray.
  • You can also line the pan with parchment paper. This makes it easier to lift the treats out later for neat slicing.
  • Set the pan aside before you begin melting the marshmallows.

Step 2: Measure the Cereal

  • Place the Lucky Charms cereal into a large bowl.
  • If you are adding extra mini marshmallows, keep them separate for now. Adding them later prevents all of them from completely melting.

Step 3: Melt the Butter

  • Place a large saucepan over low heat and add the butter.
  • Allow it to melt slowly.
  • Do not rush this step by turning the heat too high. Marshmallow mixtures can scorch easily, and burnt marshmallows can leave an unpleasant flavor.

Step 4: Add the Marshmallows

  • Once the butter has melted, add the 10 ounces of mini marshmallows.
  • Stir continuously over low heat until the marshmallows are smooth and melted.
  • When the mixture becomes glossy and creamy, remove the pan from the heat.

Step 5: Add Vanilla and Salt

  • Stir in the vanilla extract and a small pinch of salt.
  • You will immediately notice how good the mixture smells. The combination of warm butter, melted marshmallow, and vanilla is one of my favorite dessert aromas.

Step 6: Add the Lucky Charms

  • Pour the Lucky Charms cereal into the saucepan.
  • Stir gently but quickly until all of the cereal is coated in the marshmallow mixture.
  • Once most of the cereal is coated, fold in the remaining 2 cups of mini marshmallows.
  • These extra marshmallows may soften slightly, but they should not completely melt. That gives the finished treats an extra gooey texture.

Step 7: Transfer to the Pan

  • Pour the mixture into your prepared baking dish.
  • Lightly butter your hands or spatula and gently press the mixture into an even layer.
  • Do not press too firmly.
  • This is one of the biggest secrets to soft cereal treats. If you pack the mixture tightly into the pan, the finished squares can become dense and hard.
  • A gentle press is all you need.

Step 8: Cool and Slice

  • Allow the treats to cool at room temperature for approximately 30 to 45 minutes.
  • Once firm enough to cut, slice them into squares or rectangles.
  • Serve and enjoy!
