Equipment

  • Mixing bowls (one large, one medium)
  • Electric hand mixer or stand mixer
  • Measuring cups and spoons
  • Kitchen scale (optional but helpful)
  • Rubber spatula
  • Whisk
  • 8-inch round cake pan or ramekins
  • Parchment paper
  • Cooling rack
  • Offset spatula or butter knife
  • Sifter (for flour or powdered sugar)

Ingredients

Cake Batter

  • Unsalted butter — 1 cup softened
  • Granulated sugar — 1 ¼ cups
  • Eggs — 3 large
  • Vanilla extract — 2 teaspoons
  • All-purpose flour — 1 cup
  • Baking powder — ½ teaspoon
  • Salt — ¼ teaspoon
  • Whole milk — 3 tablespoons

Optional Topping Ideas

  • Powdered sugar — for dusting
  • Whipped cream — 1 cup
  • Fresh berries — ½ cup
  • Vanilla ice cream — 2 scoops

Instructions

Step 1 — Prepare Your Pan

  • Preheat oven to 175°C (350°F). Grease your cake pan with butter and line the bottom with parchment paper. This prevents sticking and gives a clean release.

Step 2 — Cream Butter and Sugar

  • In a large bowl, beat softened butter and sugar until pale and fluffy. This usually takes 3–4 minutes.
  • Don’t rush this step — I learned early in my career that proper creaming creates the base texture for the cake.

Step 3 — Add Eggs

  • Add eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl so everything blends evenly.

Step 4 — Flavor It

  • Mix in vanilla extract. Take a second to enjoy the aroma — this is where the batter starts smelling like dessert.

Step 5 — Combine Dry Ingredients

  • In another bowl, whisk flour, baking powder, and salt.

Step 6 — Bring It Together

  • Gradually add dry ingredients into the butter mixture. Pour in milk and mix gently until just combined. Avoid overmixing — this keeps the crumb tender.

Step 7 — Bake

  • Spread batter into prepared pan. Bake for 35–40 minutes until golden and set in the center.
  • Your kitchen will smell warm, buttery, and inviting — my favorite moment.

Step 8 — Cool Slightly

  • Let cake rest 10 minutes before removing. Serve warm for best results.
