  • ½ cup croutons lightly crushed
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon black pepper

  • 4 sandwich rolls ciabatta rolls, brioche buns, or sturdy slices of bread
  • 2 tablespoons butter or olive oil for toasting optional

Step 1: Season the Chicken

  • Start by patting the chicken breasts dry with paper towels. This might seem like a small step, but dry chicken browns much better in the pan.
  • Drizzle the chicken with olive oil, then season both sides with salt, black pepper, garlic powder, Italian seasoning, and paprika.
  • I like keeping the seasoning simple because the Caesar dressing already brings plenty of flavor. The goal is to create juicy, well-seasoned chicken without overpowering the other ingredients.

Step 2: Cook the Chicken

  • Heat a large skillet or grill pan over medium heat.
  • Add the chicken breasts and cook for approximately 5 to 7 minutes per side, depending on their thickness. The chicken should be golden brown on the outside and cooked through in the center.
  • For the safest and most accurate result, cook the chicken until the internal temperature reaches 165°F.
  • Once cooked, transfer the chicken to a cutting board and let it rest for about 5 minutes.
  • Do not skip the resting time if you can help it. Resting allows the juices to settle inside the meat, which means your chicken stays moist instead of losing all its juices when you slice it.
  • Slice the chicken into thin strips or bite-sized pieces.

Step 3: Prepare the Caesar Salad Filling

  • While the chicken rests, add the chopped romaine lettuce to a large bowl.
  • Pour in the Caesar dressing and add the Parmesan cheese, lemon juice, and black pepper.
  • Toss everything together until the lettuce is lightly coated.
  • My little tip here is not to drown the lettuce in dressing. You want creamy flavor in every bite, but you also want the romaine to stay crisp. Too much dressing can quickly make the sandwich heavy and messy.
  • Add the crushed croutons right before assembling the sandwiches so they stay crunchy.

Step 4: Toast the Bread

  • Slice your sandwich rolls in half.
  • You can leave the bread soft, but I highly recommend toasting it. Lightly butter the cut sides or brush them with olive oil, then toast them in a skillet, toaster, or oven.
  • A warm, crisp surface creates a barrier that helps prevent the dressing from soaking into the bread too quickly.
  • Plus, there is something about warm toasted bread with cold, creamy Caesar salad that just works beautifully.

Step 5: Assemble the Sandwiches

  • Start by placing sliced chicken on the bottom half of each roll.
  • Add a generous amount of the Caesar lettuce mixture on top.
  • Sprinkle with additional Parmesan cheese and crushed croutons.
  • If you are using bacon, avocado, or tomato, add them now.
  • Place the top half of the bread over everything and gently press the sandwich together.
  • Serve immediately while the chicken is warm and the lettuce is still crisp.
