  • 2 cups elbow macaroni uncooked
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk warm
  • ½ cup heavy cream
  • 1 cup sharp cheddar cheese grated
  • 1 cup mozzarella cheese grated
  • ½ cup parmesan cheese grated
  • ½ teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • ¼ teaspoon paprika optional, but adds warmth
  • ½ cup extra shredded cheese for topping

Instructions
 

Step 1: Cook the pasta

  • Bring a large pot of salted water to a boil. Add the macaroni and cook until just al dente. You don’t want it too soft because it will cook more in the oven. Drain and set aside.

Step 2: Make the base sauce

  • In a saucepan, melt the butter over medium heat. Once melted, add the flour and whisk continuously. Cook this mixture (called a roux) for about 1–2 minutes until it turns slightly golden and smells nutty.

Step 3: Add milk and cream

  • Slowly pour in the warm milk while whisking to avoid lumps. Then add the cream. Keep stirring until the sauce thickens and becomes smooth and silky.

Step 4: Add the cheese

  • Lower the heat and start adding the cheeses—cheddar, mozzarella, and parmesan—one handful at a time. Stir gently until everything melts into a creamy, dreamy sauce.

Step 5: Season it

  • Add salt, pepper, and paprika. Taste and adjust if needed. This is your moment to make it perfect.

Step 6: Combine pasta and sauce

  • Add the cooked macaroni into the cheese sauce. Mix until every piece is coated beautifully.

Step 7: Bake

  • Transfer the mixture into a baking dish. Sprinkle extra cheese on top. Bake at 180°C (350°F) for about 15–20 minutes, or until the top is melted and slightly golden.

Step 8: Serve

  • Let it rest for a few minutes before serving. Then dig in and enjoy!
