Equipment

  • Muffin Pan A standard 12-cup muffin pan works perfectly.
  • Paper Muffin Liners Liners make cleanup easier and help the muffins release neatly from the pan.
  • Mixing bowls You’ll want at least two bowls: one for the muffin batter and another for the cream cheese filling.
  • Hand Mixer or Electric Mixer A hand mixer makes the cream cheese filling smooth quickly. You can also use a whisk or sturdy spoon if your cream cheese is properly softened.
  • Whisk A whisk is useful for combining the dry ingredients and mixing the wet ingredients
  • Rubber spatula A spatula is perfect for gently folding blueberries into the batter without crushing them.
  • Cookie Scoop This isn’t essential, but it makes portioning the batter much easier and helps keep the muffins similar in size.
  • Cooling rack A cooling rack allows air to circulate around the muffins so the bottoms don’t become soggy.

Ingredients
  

For the Muffin Batter

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter melted and slightly cooled
  • ¾ cup granulated sugar

2 large eggs

  • 1 teaspoon vanilla extract
  • ½ cup whole milk
  • cups fresh or frozen blueberries
  • 1 teaspoon lemon zest optional

For the Cream Cheese Filling

  • 8 ounces cream cheese softened
  • ¼ cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour

A Few Ingredient Notes

  • Cream cheese: Use full-fat cream cheese for the creamiest filling. Make sure it is softened before mixing.
  • Blueberries: Fresh berries are fantastic but frozen blueberries work just as well. Don't thaw frozen berries before folding them into the batter.
  • Butter: Melted unsalted butter adds a lovely richness. Let it cool for a few minutes before combining it with the eggs.
  • Milk: Whole milk gives the muffins a tender crumb although 2% milk can work if that’s what you have.
  • Lemon zest: This is optional but I highly recommend it. You won't necessarily taste lemon; instead, it gives the blueberry flavor a little lift.

Instructions
 

Prepare the Oven and Muffin Pan

  • Start by preheating your oven to 375°F (190°C).
  • Line a 12-cup muffin pan with paper liners. If you don’t have liners, lightly grease the muffin pan with butter or nonstick cooking spray.
  • I like to prepare the pan before mixing anything because once the batter is ready, I want to get it into the oven fairly quickly.

Make the Cream Cheese Filling

  • Place the softened cream cheese in a mixing bowl.
  • Add the sugar, egg yolk, vanilla extract, and flour. Beat until the mixture is smooth and creamy, with no obvious lumps of cream cheese remaining.
  • The filling should be thick but easy to spoon.
  • Set it aside while you prepare the muffin batter.

Why Add a Little Flour?

  • The small amount of flour helps stabilize the cream cheese filling as it bakes. Without it, the filling can become overly soft and spread throughout the muffin.

Combine the Dry Ingredients

  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • If you're using lemon zest, you can add it later with the wet ingredients.
  • Mixing the dry ingredients separately helps distribute the baking powder and salt evenly throughout the flour.

Mix the Wet Ingredients

  • In another large bowl, whisk together the melted butter and sugar.
  • Add the eggs one at a time, whisking until combined. Stir in the vanilla extract and milk.
  • If you're using lemon zest, add it here.
  • The mixture may look slightly loose, but that’s exactly what you want.

Combine Wet and Dry Ingredients

  • Gradually add the dry ingredients to the wet mixture.
  • Use a spatula or wooden spoon to gently stir until the ingredients are just combined.
  • This is one of those moments when less mixing is better.
  • A few small streaks of flour are okay at first. Overmixing muffin batter can develop too much gluten, leaving you with dense or chewy muffins instead of soft ones.
  • Once the batter comes together, stop mixing.

Fold in the Blueberries

  • Add the blueberries to the batter.
  • Gently fold them in using a rubber spatula.
  • Take your time here. You don't want to crush the berries because their juices can turn the entire batter purple.
  • If you're using frozen blueberries, fold them in straight from the freezer.
  • The batter will become thicker as you mix in the berries, which is completely normal.
  • Layer the Muffin Batter and Cream Cheese
  • Spoon a small amount of muffin batter into each lined muffin cup, filling each one about one-third full.

Add a spoonful of the cream cheese mixture to the center.

  • Then cover the cream cheese with more muffin batter.
  • The cups should be about three-quarters full overall.
  • Try to keep the cream cheese filling toward the center rather than right against the sides of the muffin cups. This helps create a beautiful creamy middle without too much filling leaking out during baking.

Add a Few Extra Blueberries

  • If you have a few blueberries left, gently press two or three onto the tops of the muffins.
  • This little step makes a big difference visually.
  • Those berries will become glossy and slightly wrinkled as they bake, giving the finished muffins that gorgeous homemade bakery appearance.

Bake

  • Place the muffin pan in the preheated oven.
  • Bake for approximately 20–24 minutes, or until the muffin tops are golden and a toothpick inserted into the muffin portion comes out mostly clean.
  • Try not to insert the toothpick directly into the cream cheese center because the filling will naturally remain soft.
  • The tops should look set, lightly golden, and slightly rounded.
  • Your kitchen should smell absolutely amazing at this point.

Cool Before Serving

  • Let the muffins cool in the pan for about 5–10 minutes.
  • Then transfer them to a wire rack.
  • I know it’s tempting to eat one immediately. I've absolutely done it myself. But giving them a few minutes to cool helps the cream cheese filling set slightly and makes the muffins easier to handle.
  • Once they're warm rather than piping hot, they're ready to enjoy.
