Blueberry Cream Cheese Bread Recipe

For the Blueberry Bread Batter
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter softened
- ¾ cup granulated sugar
2 large eggs
- 1 teaspoon vanilla extract
- ½ cup sour cream or plain Greek yogurt
- ¼ cup milk
- 1 ½ cups fresh blueberries
- 1 tablespoon all-purpose flour for coating the blueberries
For the Cream Cheese Filling
- 8 ounces cream cheese softened
- ¼ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
Optional Topping
- 2 tablespoons coarse sugar or granulated sugar

- The ingredient list is simple but every item has a purpose. Butter adds richness, while sour cream helps keep the loaf moist. Vanilla gives the bread a warm bakery-style flavor, and the blueberries bring freshness and natural sweetness.
- For the best results make sure the cream cheese and butter are softened before you begin. Cold ingredients do not blend as smoothly and can leave lumps in the batter or filling.
Step 1: Prepare the Oven and Loaf Pan
Preheat your oven to 350°F (175°C).
Grease a 9 x 5-inch loaf pan or line it with parchment paper. If you use parchment paper, leave a little paper hanging over the sides. This gives you handles to lift the cooled loaf out of the pan.
Set the prepared pan aside while you make the batter.
Step 2: Mix the Dry Ingredients
In a medium bowl, whisk together:
All-purpose flour
Baking powder
Baking soda
Salt
Whisking the dry ingredients before adding them to the wet mixture helps distribute the leavening agents evenly. This gives the bread a more consistent rise.
Set the bowl aside.
Step 3: Cream the Butter and Sugar
In a large mixing bowl, beat the softened butter and sugar until the mixture looks lighter and fluffier.
This step usually takes about 2 to 3 minutes with a hand mixer.
Do not rush this part. Creaming butter and sugar adds air to the mixture, which helps create a lighter texture in the finished bread.
Step 4: Add the Eggs and Vanilla
Add the eggs one at a time, mixing well after each addition.
Then mix in the vanilla extract.
Scrape down the sides of the bowl with a rubber spatula so everything is evenly combined.
At this stage, the batter should smell wonderfully buttery and sweet.
Step 5: Add the Sour Cream and Milk
Mix in the sour cream or Greek yogurt.
Then slowly add the milk and mix until combined.
The batter may look soft and creamy, which is exactly what you want. Sour cream is one of my favorite ingredients in quick breads because it adds moisture without making the finished loaf heavy.
Step 6: Add the Dry Ingredients
Gradually add the flour mixture to the wet ingredients.
Mix on low speed or fold gently with a spatula until just combined.
This is an important baking rule: do not overmix the batter.
Overmixing develops too much gluten in the flour, which can make quick bread dense or tough. Stop mixing as soon as you no longer see large streaks of dry flour.
A few small lumps are completely fine.
Step 7: Prepare the Blueberries
Place the blueberries in a small bowl and gently toss them with 1 tablespoon of flour.
This light coating helps prevent the berries from sinking straight to the bottom of the loaf.
Fresh blueberries are wonderful in this recipe, but frozen blueberries also work. If using frozen berries, do not thaw them first. Add them directly from the freezer and gently fold them into the batter.
Be gentle while folding. Blueberries can break easily and turn the batter purple. A little color is perfectly normal, but careful mixing helps keep the slices looking beautiful.
Step 8: Make the Cream Cheese Filling
In a separate bowl, beat together:
Softened cream cheese
Sugar
Egg
Vanilla extract
Mix until smooth and creamy.
The filling should be thick but spreadable. Take a moment to scrape the sides of the bowl so there are no lumps of cream cheese hiding around the edges.
This creamy mixture is what gives the bread its irresistible cheesecake-like flavor.
Step 9: Assemble the Loaf
Spread about half of the blueberry batter into the prepared loaf pan.
Spoon the cream cheese mixture over the batter and gently spread it into an even layer. Try not to press too hard.
Add the remaining blueberry batter on top.
If desired, sprinkle a little sugar over the surface for a delicate, slightly crunchy finish.
The layers do not need to look perfect. Once baked, everything settles together beautifully.
Step 10: Bake the Bread
Place the loaf pan in the preheated oven.
Bake for approximately 55 to 70 minutes.
Because ovens and loaf pans can vary, begin checking the bread around the 55-minute mark. Insert a toothpick into the bread portion rather than directly into the cream cheese filling.
The toothpick should come out mostly clean or with a few moist crumbs.
If the top starts browning too quickly before the center is baked, loosely cover the loaf with aluminum foil.
Step 11: Cool Before Slicing
Allow the bread to cool in the pan for about 20 minutes.
Then carefully transfer it to a wire rack and allow it to cool completely.
I know this is the hardest part. Freshly baked blueberry bread smells incredible, and waiting feels almost unfair. But allowing the loaf to cool gives the cream cheese layer time to set properly.
If you slice it too early, the filling may be very soft, and the slices may not hold their shape.
