  • 8 oz 225 g mushrooms, sliced

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • Salt to taste
  • ¾ cup sour cream room temperature

For Serving

  • 12 oz egg noodles or rice, mashed potatoes
  • Fresh parsley optional

Step 1: Cook the Noodles

  • Start by boiling your egg noodles in salted water. Cook until just tender, then drain and set aside. A little butter tossed in helps prevent sticking.

Step 2: Brown the Ground Beef

  • Heat a large skillet over medium heat. Add olive oil, then ground beef. Break it up gently and let it brown fully. Don’t rush — browning equals flavor. Season lightly with salt and pepper.
  • Once cooked, remove beef from the pan and set aside.

Step 3: Sauté the Onions and Mushrooms

  • In the same skillet, add butter. Toss in the onions and cook until soft and lightly golden. Add mushrooms and cook until they release their moisture and turn golden brown. This step builds the heart of the flavor.
  • Add garlic and cook for 30 seconds.

Step 4: Make the Sauce Base

  • Sprinkle flour over the veggies. Stir well and cook for one minute to remove the raw flour taste. Slowly pour in beef broth while stirring. The sauce will thicken gently.
  • Add Worcestershire sauce, paprika, and black pepper.

Step 5: Bring It All Together

  • Return ground beef to the pan. Stir gently and simmer for 5–7 minutes until the sauce is smooth and rich.
  • Lower the heat. Stir in sour cream slowly. Do not boil after this — gentle heat keeps the sauce silky.
  • Taste and adjust salt.

Step 6: Serve and Enjoy

  • Serve hot over egg noodles. Sprinkle with parsley if you like.
