For the Chicken:
- 500 g boneless chicken breast cut into bite-sized pieces
- 1 cup all-purpose flour
- ½ cup cornstarch
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 egg
- ½ cup cold water or buttermilk
- Oil for frying
For the Bang Bang Sauce:
- ½ cup mayonnaise
- 3 tablespoons sweet chili sauce
- 1 –2 tablespoons hot sauce adjust to taste
- 1 tablespoon honey
- 1 teaspoon vinegar or lemon juice
Optional Garnish:
- Chopped green onions
- Sesame seeds

Step 1: Prepare the Chicken
Start by cutting your chicken into small, even pieces. This helps them cook evenly and gives you that perfect bite-size texture.
In a bowl, mix:
Flour
Cornstarch
Salt
Pepper
Garlic powder
Paprika
In another bowl, whisk together the egg and cold water (or buttermilk).
Dip each piece of chicken into the wet mixture, then coat it in the dry mixture. Press lightly so the coating sticks well.
Step 2: Heat the Oil
Heat oil in a deep pan over medium heat. You want it hot but not smoking—around 175–180°C (350°F).
If you don’t have a thermometer, just drop a tiny bit of batter into the oil. If it sizzles and floats, you’re good to go.
Step 3: Fry the Chicken
Carefully place the chicken pieces into the oil. Don’t overcrowd the pan.
Fry for about 4–5 minutes, or until golden brown and crispy.
Remove and place on paper towels to drain excess oil.
Step 5: Combine
You can either:
Toss the chicken in the sauce for full coating
Or drizzle the sauce over for a lighter touch
