Equipment

  • A sharp knife
  • Cutting board
  • Measuring cups and spoons
  • Deep frying pan or wok
  • Tongs or slotted spoon
  • Plate or tray
  • Sauce bowl
  • Optional: thermometer for oil temperature

Ingredients

For the Chicken:

  • 500 g boneless chicken breast cut into bite-sized pieces
  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 egg
  • ½ cup cold water or buttermilk
  • Oil for frying

For the Bang Bang Sauce:

  • ½ cup mayonnaise
  • 3 tablespoons sweet chili sauce
  • 1 –2 tablespoons hot sauce adjust to taste
  • 1 tablespoon honey
  • 1 teaspoon vinegar or lemon juice

Optional Garnish:

  • Chopped green onions
  • Sesame seeds
  • I always say: don’t skip the sauce balance. That’s what makes Bang Bang Chicken truly shine.

Instructions

Step 1: Prepare the Chicken

  • Start by cutting your chicken into small, even pieces. This helps them cook evenly and gives you that perfect bite-size texture.
  • In a bowl, mix:
  • Flour
  • Cornstarch
  • Salt
  • Pepper
  • Garlic powder
  • Paprika
  • In another bowl, whisk together the egg and cold water (or buttermilk).
  • Dip each piece of chicken into the wet mixture, then coat it in the dry mixture. Press lightly so the coating sticks well.

Step 2: Heat the Oil

  • Heat oil in a deep pan over medium heat. You want it hot but not smoking—around 175–180°C (350°F).
  • If you don’t have a thermometer, just drop a tiny bit of batter into the oil. If it sizzles and floats, you’re good to go.

Step 3: Fry the Chicken

  • Carefully place the chicken pieces into the oil. Don’t overcrowd the pan.
  • Fry for about 4–5 minutes, or until golden brown and crispy.
  • Remove and place on paper towels to drain excess oil.

Step 4: Make the Sauce

  • In a bowl, mix:
  • Mayonnaise
  • Sweet chili sauce
  • Hot sauce
  • Honey
  • Vinegar or lemon juice
  • Taste it. Adjust sweetness or spice if needed. This is your moment to personalize the flavor.

Step 5: Combine

  • You can either:
  • Toss the chicken in the sauce for full coating
  • Or drizzle the sauce over for a lighter touch
  • I personally love tossing—it makes every bite rich and flavorful.

Step 6: Garnish and Serve

  • Sprinkle green onions and sesame seeds on top.
  • Serve immediately while it’s hot and crispy.
