Cottage Cheese

  • Full-fat cottage cheese gives the creamiest texture but low-fat versions also work well. Small curd cottage cheese blends more smoothly into the eggs.

Cheddar Cheese

  • Sharp cheddar adds a rich savory flavor. If you prefer something milder, mozzarella works too.

Spinach

  • Fresh spinach adds color and freshness. Frozen spinach can also work but make sure to squeeze out extra water first.

Instructions
 

Step 1: Preheat the Oven

  • Preheat your oven to 375°F (190°C).
  • Grease your baking dish lightly with olive oil or butter so the eggs do not stick.

Step 2: Prepare the Egg Mixture

  • In a large bowl, crack the eggs and whisk them well until smooth.
  • Add the cottage cheese, shredded cheddar, chopped spinach, onion, salt, pepper, and garlic powder.
  • Mix everything together until evenly combined.

Step 3: Pour Into Baking Dish

  • Pour the mixture into your prepared baking dish and spread it evenly.
  • If you want a golden cheesy top, sprinkle a little extra cheddar on top.

Step 4: Bake

  • Bake for 30–35 minutes or until the center is set and the top is lightly golden.
  • The eggs should look puffed and slightly firm in the middle.

Step 5: Cool Slightly and Serve

  • Let the baked eggs cool for about 5 minutes before slicing.
  • Serve warm with toast, avocado, or fresh fruit.
