  • 1 bag about 20 oz / 560 g frozen hashbrowns, thawed
  • 500 g about 1 lb breakfast sausage
  • 1 small onion finely chopped
  • 2 cups shredded cheddar cheese
  • 6 large eggs
  • 1 ½ cups milk
  • ½ cup sour cream
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika optional, but adds warmth
  • 2 tablespoons butter for extra richness

Optional add-ins (my personal favorites):

  • Diced bell peppers
  • Mushrooms
  • Cooked bacon instead of sausage
  • A pinch of chili flakes for heat
  • The combination of eggs cheese, and sausage creates a rich, savory base, while the hashbrowns soak up all the flavor like a dream.

Instructions
 

Step 1: Preheat and Prep

  • Preheat your oven to 180°C (350°F).
  • Grease your baking dish with butter or cooking spray. This prevents sticking and adds a subtle buttery flavor.

Step 2: Cook the Sausage

  • In a skillet over medium heat, cook the sausage until browned and fully cooked. Break it into small crumbles as it cooks.
  • Add the chopped onion and cook for another 2–3 minutes until soft and fragrant.
  • Drain any excess grease and set aside.
  • This step builds the base flavor of the casserole—don’t rush it.

Step 3: Prepare the Hashbrown Layer

  • Spread the thawed hashbrowns evenly in the bottom of your baking dish.
  • If you like a slightly crisp bottom layer (I always do), you can lightly sauté the hashbrowns in butter before adding them.

Step 4: Add Meat and Cheese

  • Sprinkle the cooked sausage and onion mixture evenly over the hashbrowns.
  • Then add the shredded cheddar cheese on top. Be generous—this is not the time to hold back!

Step 5: Mix the Egg Mixture

  • In a large bowl, whisk together:
  • Eggs
  • Milk
  • Sour cream
  • Salt
  • Pepper
  • Garlic powder
  • Paprika
  • Whisk until smooth and creamy.

Step 6: Assemble the Casserole

  • Pour the egg mixture evenly over the layered ingredients in the baking dish.
  • Gently tap the dish on the counter to help the mixture settle into all the layers.

Step 7: Bake

  • Place the casserole in the preheated oven and bake for 40–50 minutes.
  • The top should be golden, and the center should be set (not jiggly).
  • If the top browns too quickly, cover loosely with foil.

Step 8: Rest and Serve

  • Let the casserole rest for about 10 minutes before slicing.
  • This helps it firm up and makes serving easier.
